Apple, pumpkin and cinnamon cake

Iftar competition recipe:

What you’ll need:
A mixing bowl, a tablespoon, a teaspoon, a sharp knife, a ovenproof cake tin, a roll of baking paper

A cooking apple peeled, pips/core removed, cubed; a edible pumpkin or quarter of a monster pumpkin peeled and deseeded; juice of 1 orange, a teaspoon of cinnamon; 6 eggs; 10oz caster sugar; 10oz coconut oil or butter; 10oz self-raising flour


  1. Pre-heat the oven to 200 degrees C.
  2. Mix the sugar and fat into a large bowl until the mixture is creamy, add the eggs and flour and mix together along with the cinnamon, cubed apple and pumpkin and juice of 1 orange until fully blended
  3. Pour into a cake tin, greased or lined with baking paper
  4. Place into the oven until golden brown, and a skewer or knife stuck into the centre of the cake comes out clean, approx 35 minutes.
  5. Cool before serving.

Tastes nice on its own and also with custard or cream. I have it on its own. There should also be some leftovers.
