Heavenly pumpkin and tomato soup

Here is another yummy #Iftar or #suhoor recipe

What is needed:
A saucepan, sharp knife, serving spoon, dessert spoon, a liquidiser

Quarter of a monster pumpkin; peeled, seeds removed and pumpkin chopped into cubes, 2 tins of tomatoes in juice, a tub of pouring cream, 2 onions; peeled and chopped into cubes, 2 vegetable stock cubes, water, coconut oil

  1. Fry the onions (can add garlic also if you want)

  2. Add the pumpkin with the tomatoes and stock cube with water (water amount varies on your tastebuds)

  3. Bring to the boil and leave to simmer for about 20-30 minutes

  4. Allow to cool before liquidising and add in cream, then serve with croutons or bread

Serves 8 or 9 people, depending on how much water is used. Reheat if required. Can be frozen when cold.
